How to drink arak: the ratio and the right order

Classic arak is drunk diluted: pour one measure of arak into a glass, add twice as much cold water, and only then ice. The water turns the arak milky white, which is exactly what should happen.

Pouring Classic Arak into a glass

Step by step

  1. Pour a measure of arak into a clean glass.
  2. Add twice as much cold water. The arak turns white.
  3. Add one or two ice cubes last.

Why arak turns white

The taste of anise comes from an oil called anethole. Anethole dissolves in strong alcohol, but not in water. When you add water, the alcohol level drops and the oil comes out of solution in tiny droplets that scatter light. That is why ouzo, raki and pastis turn white too.

Why the ice goes in last

Ice straight into undiluted arak makes the anethole crystallize, and a white film forms on the surface of the drink. Adding the water first prevents this.
